Method作り方

  1. Step 1: 手順1:Whisk the flour, cold dashi, eggs, grated nagaimo and salt into a smooth batter. Rest it in the fridge for 15 minutes.

  2. Step 2: 手順2:Fold in the cabbage, green onions, tenkasu and pickled ginger. Mix just enough to coat everything — trapped air keeps the pancakes light.

  3. Step 3: 手順3:Heat the oil in a large non-stick frying pan over medium heat. Spoon in half the mixture and shape it into a round about 2 cm thick without pressing down.

  4. Step 4: 手順4:Lay half the pork belly slices over the top. Cook for 5 minutes until the base is golden, then flip with two spatulas so the pork is underneath.

  5. Step 5: 手順5:Cover and cook for 5 minutes, then uncover, flip again and cook for 2 more minutes. The centre should feel springy. Repeat with the rest.

  6. Step 6: 手順6:Brush with okonomi sauce, zigzag the mayonnaise across, then scatter over aonori and bonito flakes — they will dance in the heat. Serve at once.

The story of this dish

Okonomiyaki means 'grilled as you like it'. It grew out of issen yoshoku, a thin flour pancake sold cheaply to children before the war, and became a filling staple when rice was scarce after 1945. Osaka mixes everything into the batter; Hiroshima layers it with noodles. In both cities people still cook it themselves on hotplates set into the table.
