Method作り方

  1. Step 1: 手順1:Heat the oil in a heavy pot and cook the onions over medium-low heat for 15 minutes, stirring often, until soft and golden. Add the garlic and ginger for the last minute.

  2. Step 2: 手順2:Add the carrots and potatoes, pour in the stock and simmer for 15 minutes until the vegetables are just tender.

  3. Step 3: 手順3:Meanwhile make a roux: melt the butter in a small pan, stir in the flour and cook for 3 minutes until biscuit-coloured, then stir in the curry powder for 30 seconds.

  4. Step 4: 手順4:Whisk a ladle of the hot stock into the roux until smooth, then stir it back into the pot with the apple, soy sauce, tonkatsu sauce and honey. Simmer for 10 minutes, stirring, until thick and glossy. Season to taste.

  5. Step 5: 手順5:Score the fat on the edge of each chop so it stays flat, pound to 1.5 cm thick and season with salt and pepper. Dredge in flour, dip in egg and press firmly into the panko.

  6. Step 6: 手順6:Heat the frying oil to 170 °C in a deep pan. Fry the cutlets two at a time for 5–6 minutes, turning once, until deep golden and 63 °C in the centre. Rest on a rack for 3 minutes.

  7. Step 7: 手順7:Slice each cutlet into strips. Spoon rice into one side of each plate, lay the katsu beside it and pour the curry sauce around. Serve with pickles or cabbage.

The story of this dish

Curry came to Japan in the late 1800s by way of the British Navy: the Imperial Navy took it up as a curry-powder stew thickened with roux, and Japan's Maritime Self-Defense Force still eats it every Friday. Tonkatsu appeared in Tokyo's Western-style restaurants around the same time. Putting the two together is credited to the restaurant Ginza Swiss in 1948, for Yomiuri Giants player Shigeru Chiba, who wanted both on one plate.
