Method作り方

  1. Step 1: 手順1:Mix the pork with the lemongrass, garlic, fish sauce, sugar, oil and pepper. Cover and marinate in the fridge for at least 1 hour.

  2. Step 2: 手順2:For the pickles, stir the vinegar, warm water, sugar and salt until dissolved. Add the carrot and daikon, press them under the liquid and leave for at least 1 hour.

  3. Step 3: 手順3:Heat a grill pan or barbecue until very hot. Cook the pork in a single layer for 2–3 minutes a side, until charred at the edges and cooked through.

  4. Step 4: 手順4:Warm the baguettes in a 200 °C oven for 4–5 minutes so the crust crackles, then split them along one side without cutting all the way through.

  5. Step 5: 手順5:Spread the inside with pâté on one side and mayonnaise on the other. Add the pork, a sprinkle of Maggi, cucumber, a handful of drained pickles, chilli and plenty of cilantro. Eat straight away.

The story of this dish

The baguette arrived with French rule in the 19th century, but Vietnamese bakers made it their own: lighter, with a thin shell that shatters. In the 1950s Saigon's street vendors began filling it with local flavours, pickles, herbs, chilli and grilled meat, and bánh mì, simply 'bread', became one of the world's great sandwiches, sold from carts on every corner.
