Method作り方
Step 1: 手順1:Toast the chilies in a dry skillet for 20–30 seconds per side until fragrant, then soak in hot water for 15 minutes.
2:Drain the chilies and blend with the pineapple juice, vinegar, garlic, achiote, spices and salt until very smooth.
3:Coat the pork slices in the marinade, cover and refrigerate for at least 4 hours, or overnight.
4:Sear the pork in batches on a very hot grill or cast-iron pan for 3–4 minutes per side until charred at the edges. (For a trompo effect, stack the slices tightly on a skewer and roast at 200 °C for about an hour.)
5:Grill the pineapple slices for 2–3 minutes per side until caramelised.
6:Chop the pork and pineapple into small pieces. Warm the tortillas on a dry comal or pan.
7:Fill doubled-up tortillas with pork and pineapple, top with onion and cilantro and serve with lime and salsa verde.
The story of this dish
Al pastor — “shepherd style” — descends from the shawarma brought to Puebla and Mexico City by Lebanese immigrants in the early twentieth century. Mexican cooks swapped lamb for pork, added a chili-achiote marinade and crowned the vertical spit, the trompo, with a pineapple. A good taquero slices meat and a sliver of pineapple straight onto the tortilla.
