Method作り方
Step 1: 手順1:Heat the grill to high. Spread the tomatillos, chillies, onion and garlic on a tray and grill for 8–10 minutes, turning once, until blistered and soft.
2:Peel the garlic and blend everything with the cilantro and half the stock until smooth. Season well with salt.
3:Heat the oil in a saucepan, pour in the salsa — it will spit — and simmer for 10 minutes with the rest of the stock until slightly thickened and darker green.
4:Mix the chicken with the crema, 120 ml of the salsa and a pinch of salt. Heat the oven to 200 °C.
5:Fry each tortilla in hot oil for 5 seconds a side so it turns pliable and won't crack. Drain on paper.
6:Spread a little salsa in a baking dish. Fill each tortilla with chicken, roll it up and lay it seam-side down. Pour over the remaining salsa and scatter with the grated cheese.
7:Bake for 15 minutes until bubbling. Top with crema, queso fresco and pickled onion and serve hot.15分、ぐつぐつするまで焼く。
The story of this dish
Rolling tortillas around food and dipping them in chilli sauce goes back to the Aztecs, and an 1831 Mexican cookbook already lists enchiladas by name — 'chillied'. The green version leans on the tomatillo, a tart husk fruit domesticated in Mexico long before the tomato. Every fonda in the country has its own version.
