Method作り方
Step 1: 手順1:Rub the oil into the flour, ajwain and salt until the mixture holds together when squeezed. Add the water gradually and knead into a stiff, smooth dough. Cover and rest for 30 minutes.
2:Heat the oil for the filling and fry the cumin and coriander seeds for 30 seconds. Add the ginger and chilies for 30 seconds, then the peas for 2 minutes.
3:Crumble in the potatoes in rough chunks, add the spices and salt and stir for 2–3 minutes. Fold in the cilantro and let the filling cool completely.
4:Divide the dough into 6 balls. Roll each into a 16 cm oval and cut it in half across the middle.
5:Wet the straight edge of a half, fold it into a cone and press the overlapping seam to seal. Fill with about 2 tablespoons of filling, wet the open edge and pinch it closed.
6:Heat the oil to 140–150 °C — lower than you'd think. Fry the samosas in batches for 15–20 minutes, turning occasionally, until evenly golden. The low heat keeps the crust crisp and free of bubbles.
7:Drain on a rack and serve warm with tamarind and mint chutneys.
The story of this dish
The samosa travelled to India with Central Asian traders and cooks around the 13th and 14th centuries; medieval Persian texts describe “sanbosag” filled with minced meat and nuts. The potato filling came much later, after the Portuguese brought potatoes to India in the sixteenth century.
