Method作り方
Step 1: 手順1:Bring a large pot of water to a boil and salt it lightly — the pecorino is already salty.
2:Put the guanciale in a cold large skillet, then cook over medium heat for 8–10 minutes until the fat has rendered and the edges are crisp. Turn off the heat.
3:Whisk the yolks, whole eggs, pecorino and most of the pepper into a thick paste.
4:Cook the spaghetti until 1 minute short of al dente. Reserve 250 ml of the pasta water before draining.
5:Add the pasta to the skillet with the guanciale and toss to coat in the fat. Let it sit off the heat for about 30 seconds so the pan isn't scorching.
6:Pour in the egg mixture with 60 ml of pasta water and toss vigorously, adding splashes of water until the sauce turns glossy and creamy. If it starts to look grainy, the pan is too hot — keep it off the heat.
7:Serve immediately with extra pecorino and the remaining pepper.
The story of this dish
Carbonara only appears in print after the Second World War, around Rome, and one popular theory credits the bacon and powdered eggs in American soldiers' rations. Others link the name to the carbonari, charcoal burners of the Apennines. Whatever its origin, Romans are strict: guanciale, egg, Pecorino Romano and pepper.
