Method作り方

  1. Step 1: 手順1:Whisk the egg yolks with the sugar for 4–5 minutes until pale, thick and doubled in volume.

  2. Step 2: 手順2:Add the mascarpone and whisk briefly on low speed until smooth — stop as soon as it is combined so it doesn't split.

  3. Step 3: 手順3:In a clean bowl, whisk the egg whites to firm peaks. Fold them into the mascarpone in three additions with a spatula, keeping as much air as you can.

  4. Step 4: 手順4:Mix the cooled espresso with the marsala in a shallow dish. Dip each savoiardo for one second per side — any longer and it turns soggy.

  5. Step 5: 手順5:Lay a single layer of soaked biscuits in a 20 × 30 cm dish and spread over half the cream. Repeat with a second layer of biscuits and the rest of the cream, smoothing the top.20×30cmの器に浸したビスケットを1段並べ、クリームの半量を広げる。

  6. Step 6: 手順6:Cover and chill for at least 6 hours, ideally overnight, so it sets and the flavours meld.

  7. Step 7: 手順7:Just before serving, sift the cocoa evenly over the top and scatter with grated chocolate.

The story of this dish

For a dessert that feels timeless, tiramisù is young. Most food historians trace it to the Le Beccherie restaurant in Treviso in the late 1960s, where pastry cook Roberto Linguanotto and owner Ada Campeol layered coffee-soaked biscuits with mascarpone cream. Its name means 'pick me up' — a nod to the espresso and the sugar.
