Method作り方

  1. Step 1: 手順1:For the aspic, blanch the pork skin for 3 minutes and rinse. Simmer with the water, green onions, ginger and wine for 2 hours until reduced to about 400 ml. Strain into a dish and chill for 3 hours until set firm.

  2. Step 2: 手順2:Knead the flour, salt and warm water into a smooth, soft dough for 8–10 minutes. Cover and rest for 30 minutes.

  3. Step 3: 手順3:Stir the pork with the soy sauce, wine, sugar, salt, sesame oil, ginger and pepper in one direction for 2 minutes until sticky. Finely chop 250 g of the aspic and fold it in. Chill the filling while you roll.

  4. Step 4: 手順4:Roll the dough into a log and cut into 24 pieces of about 15 g. Roll each into an 8 cm round, thinner at the edge than in the centre.

  5. Step 5: 手順5:Put a heaped teaspoon of filling in the middle. Pleat the edge up and around with your thumb and forefinger — aim for 16 or more folds — and twist the top closed.

  6. Step 6: 手順6:Line a bamboo steamer with cabbage leaves or perforated paper and set the dumplings 2 cm apart. Steam over rapidly boiling water for 8 minutes.

  7. Step 7: 手順7:Serve at once with black vinegar and shredded ginger. Lift each dumpling gently onto a spoon, nip a small hole to let the steam out, sip the soup, then eat.

The story of this dish

Xiaolongbao — 'little basket buns' — were first sold around 1871 in Nanxiang, a town outside Shanghai, by a dim sum seller called Huang Mingxian. The trick is the aspic: chilled jellied stock folded into the filling turns back into soup inside the steamer. Taipei's Din Tai Fung, which pleats every dumpling with 18 folds, made them famous around the world.
